Method
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a small bowl, mix breadcrumbs and milk. Let sit for 5 minutes to form a panade.
- In a large bowl, combine ground chicken, soaked breadcrumbs, eggs, 1/2 cup Parmesan, onion, garlic, Italian seasoning, salt, pepper, and parsley.
- Mix gently with hands until just combined. Do not overwork the meat.
- Transfer mixture to the baking sheet and shape into a 9x5 inch loaf.
- Bake for 40 minutes.
- Remove from oven. Top generously with marinara sauce and shredded mozzarella cheese.
- Return to oven and bake for another 15-20 minutes until cheese is golden and internal temperature reaches 165°F.
- Let rest for 10 minutes before slicing and serving.

Store leftovers in an airtight container in the fridge for up to 3 days.
