Ingredients
  

Banana Mixture
  • 4-5 ripe bananas sliced
  • 0.5 cup brown sugar packed
  • 0.25 cup dark rum or 1 tsp rum extract
  • 1 tsp ground cinnamon
  • 0.25 tsp nutmeg
Cobbler Batter
  • 0.5 cup unsalted butter melted in pan
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 1 cup whole milk
  • 1 tsp vanilla extract
Garnish
  • 1 cup whipped cream optional
  • 2 tbsp caramel sauce optional

Equipment

  • 9x13 Baking Dish
  • Mixing bowls
  • Whisk

Method
 

  1. Preheat oven to 350°F (175°C). Place the butter in a 9x13 inch baking dish and put it in the oven to melt.
  2. In a medium bowl, combine sliced bananas, brown sugar, rum, cinnamon, and nutmeg. Toss gently to coat.
  3. In a separate bowl, whisk together flour, granulated sugar, baking powder, and salt. Stir in milk and vanilla until smooth.
  4. Remove the baking dish from the oven once butter is melted. Pour the batter directly over the melted butter. DO NOT STIR.
  5. Spoon the banana mixture and any juices evenly over the batter. DO NOT STIR.
  6. Bake for 40-45 minutes until the crust is golden brown and the edges are bubbling.
  7. Let stand for 10 minutes before serving warm, topped with whipped cream or ice cream.

Notes

Ensure you do not stir the layers for that classic cobbler texture.
