Method
- In a medium saucepan, combine chopped peaches, sugar, and 1 cup of water. Bring to a gentle boil over medium-high heat.
- Reduce heat to low and simmer uncovered for 10-12 minutes until peaches are very soft and sugar is dissolved.
- Remove from heat, let cool slightly, and transfer the mixture to a blender. Blend until completely smooth.
- Pour the blended mixture through a fine-mesh strainer into a bowl, pressing with a spoon to extract all liquid. Discard solids and let syrup cool.
- In a large serving pitcher, combine the cooled peach syrup, fresh lemon juice, and the remaining 5 cups of cold water. Stir well.
- Chill in the refrigerator for at least 30 minutes.
- Serve over ice in tall glasses, garnished with a peach slice, lemon wheel, and fresh mint.
Notes
You can make the peach syrup up to a week in advance and store it in an airtight container in the refrigerator.
