Ingredients

Peach Syrup
  • 4 large peaches pitted and roughly chopped
  • 1 cup granulated sugar
  • 1 cup water cold
Lemonade Base
  • 1 cup lemon juice freshly squeezed (about 6-8 lemons)
  • 5 cups water cold
  • 1 batch Ice cubes for serving
  • 1 handful Fresh mint leaves for garnish
  • 1 cup Peach slices and lemon wheels for garnish

Equipment

  • Medium saucepan
  • Blender or immersion blender
  • Fine-mesh strainer
  • Large serving pitcher

Method

  1. In a medium saucepan, combine chopped peaches, sugar, and 1 cup of water. Bring to a gentle boil over medium-high heat.
  2. Reduce heat to low and simmer uncovered for 10-12 minutes until peaches are very soft and sugar is dissolved.
  3. Remove from heat, let cool slightly, and transfer the mixture to a blender. Blend until completely smooth.
  4. Pour the blended mixture through a fine-mesh strainer into a bowl, pressing with a spoon to extract all liquid. Discard solids and let syrup cool.
  5. In a large serving pitcher, combine the cooled peach syrup, fresh lemon juice, and the remaining 5 cups of cold water. Stir well.
  6. Chill in the refrigerator for at least 30 minutes.
  7. Serve over ice in tall glasses, garnished with a peach slice, lemon wheel, and fresh mint.

Notes

You can make the peach syrup up to a week in advance and store it in an airtight container in the refrigerator.
