Ingredients
  

Steak & Marinade
  • 1 lb sirloin or ribeye steak sliced into strips
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp black pepper
Base & Veggies
  • 2 cups cooked jasmine rice
  • 2 medium zucchini sliced into rounds
  • 1 tbsp butter
Creamy Sauce
  • 0.5 cup mayonnaise
  • 2 tbsp sour cream
  • 2 cloves garlic minced
  • 1 tsp lemon juice
  • 1 tsp dried parsley

Equipment

  • Large Skillet or Cast Iron Pan
  • Rice cooker or pot
  • Mixing bowls
  • Whisk

Method
 

  1. Cook rice according to package instructions until fluffy.
  2. Slice steak against the grain into strips. Toss in a bowl with olive oil, soy sauce, garlic powder, paprika, salt, and pepper.
  3. Whisk together mayonnaise, sour cream, minced garlic, lemon juice, and parsley in a small bowl. Add water 1 tsp at a time to thin if needed.
  4. Heat butter in a skillet over medium-high heat. Sear zucchini rounds for 2-3 minutes per side until golden. Remove from pan.
  5. In the same hot skillet, sear steak strips for 1-2 minutes per side until browned and cooked to preference.
  6. Assemble bowls with rice, zucchini, and steak. Drizzle generously with the creamy sauce and serve hot.

Notes

Store sauce separately if meal prepping to keep the dish fresh.
