Ingredients
  

Fries
  • 3 large Russet potatoes scrubbed and cut into wedges
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp sea salt
  • 0.5 tsp black pepper freshly ground
Steak
  • 2 New York Strip or Sirloin steaks approx 1lb total
  • 1 tbsp olive oil
  • 2 cloves garlic minced (optional)
  • 1 tbsp butter optional for basting
Garnish & Sauce
  • 2 tbsp fresh parsley chopped
  • 0.25 cup Parmesan cheese grated
  • 0.5 cup mayonnaise
  • 1 tsp lemon juice

  • Parchment paper

  • Cast iron skillet (optional)

Method
 

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. Cut potatoes into wedges and soak in cold water for 30 minutes. Drain and pat completely dry.
  3. Toss potatoes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
  4. Arrange potatoes in a single layer on the baking sheet. Bake for 30–40 minutes, flipping halfway through, until crispy.
  5. While fries bake, season steaks generously with salt and pepper.
  6. Sear steaks in a hot skillet for 3-4 minutes per side (or bake on a separate sheet for 8-12 minutes) until desired doneness.
  7. Let steak rest for 5-10 minutes, then slice thinly against the grain.
  8. Mix mayonnaise, lemon juice, and a pinch of garlic for the sauce.
  9. Serve steak slices over the hot fries, garnished with Parmesan and parsley.

Notes

Soaking the potatoes is key to getting them crispy in the oven.
