Ingredients
  

Main Dish
  • 1 lb chicken breast cubed
  • 1.5 cups orzo pasta uncooked
  • 3 cups chicken broth low-sodium
  • 2 cups broccoli florets cut small
  • 0.5 cup carrots diced
  • 1.5 cups cheddar cheese shredded
  • 2 cloves garlic minced
  • 0.5 yellow onion diced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • to taste salt and pepper

Method
 

  1. Heat olive oil in a skillet and brown the seasoned chicken cubes for 5-7 minutes; remove and set aside.
  2. Sauté onion and carrots in the same pan for 3-4 minutes, then add garlic for 1 minute.
  3. Add dry orzo to the skillet and toast for 1-2 minutes until slightly golden.
  4. Pour in chicken broth, bring to a boil, then cover and simmer for 8 minutes.
  5. Stir in broccoli and the cooked chicken, cover, and simmer for another 4-5 minutes.
  6. Turn off heat and stir in shredded cheddar until the sauce is creamy and melted.
  7. Let rest for 2 minutes before serving.

Notes

Use freshly shredded cheese for the smoothest melting results.
