Ingredients
  

Chocolate Cookie Crust
  • 24 chocolate sandwich cookies crushed
  • 5 tbsp unsalted butter melted
Fudgy Brownie Layer
  • 0.5 cup unsalted butter
  • 4 oz semi-sweet chocolate chopped
  • 1 cup granulated sugar
  • 2 eggs large, room temperature
  • 1 tsp pure vanilla extract
  • 0.33 cup all-purpose flour
  • 0.25 cup unsweetened cocoa powder
  • 0.25 tsp salt
Chocolate Pudding Layer
  • 0.66 cup granulated sugar
  • 0.25 cup cornstarch
  • 0.25 tsp salt
  • 2.5 cups whole milk
  • 4 egg yolks large
  • 4 oz bittersweet chocolate chopped
  • 2 tbsp unsalted butter
  • 1 tsp pure vanilla extract
Whipped Cream Topping
  • 1.5 cups heavy whipping cream cold
  • 2 tbsp powdered sugar
  • 0.5 tsp pure vanilla extract
  • chocolate shavings for garnish

Method
 

  1. Preheat oven to 350°F (175°C). Mix crushed cookies with melted butter and press into a 9-inch pie pan. Bake 10 minutes, then cool slightly.
  2. For the brownie layer, melt 1/2 cup butter and semi-sweet chocolate in the microwave. Whisk in sugar, eggs, and vanilla. Fold in flour, cocoa powder, and salt.
  3. Pour brownie batter over the crust. Bake at 350°F for 20-25 minutes until the edges are set. Let cool completely.
  4. For the pudding, whisk sugar, cornstarch, salt, and milk in a saucepan over medium heat until thickened. Temper egg yolks with some hot milk, then return all to the pan and cook until very thick.
  5. Remove pudding from heat. Stir in bittersweet chocolate, 2 tbsp butter, and vanilla until smooth.
  6. Pour warm pudding over the cooled brownie layer. Cover with plastic wrap touching the surface and chill for at least 4 hours.
  7. Before serving, whip heavy cream, powdered sugar, and vanilla to medium-stiff peaks. Spread over the pie and garnish with chocolate shavings.

Notes

For best results, allow the pie to chill overnight so the pudding layer sets completely before slicing.
