Ingredients
  

Fries
  • 4 russet potatoes cut into fries
  • 1 quart vegetable oil for frying
  • 1 tsp salt
Cajun Seasoning
  • 1 tsp paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.25 tsp cayenne pepper adjust to taste
  • 0.25 tsp black pepper
Cheese Sauce
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1.5 cups milk warm
  • 1 cup cheddar cheese shredded
  • 0.5 cup mozzarella cheese shredded

Equipment

Method
 

  1. Soak cut potatoes in cold water for 30 minutes, then drain and dry well.
  2. Fry or bake potatoes until golden and crispy. Season lightly with salt.
  3. Mix all Cajun seasoning ingredients in a small bowl.
  4. Toss hot fries with Cajun seasoning until evenly coated.
  5. Melt butter in a saucepan, whisk in flour, then slowly add milk until thickened.
  6. Stir in cheeses until smooth and creamy.
  7. Drizzle cheese sauce over fries, garnish, and serve hot.
