  • 1 lb ground beef 80/20 preferred
  • 4 cups broccoli florets fresh, chopped into bite-sized pieces
  • 0.5 cup yellow onion chopped
  • 2 cloves garlic minced
  • 1.5 cups sharp cheddar cheese freshly grated
  • 2 tbsp olive oil or butter
  • 0.25 cup beef broth or water
Seasonings
  • 1 tsp salt to taste
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 0.25 tsp red pepper flakes optional

Method
 

  1. Wash and chop the broccoli into small florets. Dice the onion and mince the garlic.
  2. In a large skillet over medium-high heat, brown the ground beef, breaking it apart as it cooks.
  3. Add the chopped onion to the beef and cook until soft and translucent. Drain excess grease, then stir in the garlic for 1 minute. Remove the mixture to a plate.
  4. In the same skillet over medium heat, add the olive oil, broccoli, and beef broth. Cover with a lid and steam for 4-5 minutes until tender.
  5. Remove the lid, let the liquid evaporate, and return the beef mixture to the skillet. Stir in the salt, pepper, garlic powder, and red pepper flakes.
  6. Reduce heat to low, sprinkle the grated cheddar cheese evenly over the top, and cover for 2-3 minutes until melted.
  7. Serve immediately from the skillet.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days.
