  • 1 lb ground beef 80/20 lean-to-fat ratio recommended
  • 4 cups broccoli florets cut into bite-sized pieces
  • 0.5 yellow onion diced small
  • 3 cloves garlic minced
  • 1.5 cups cheddar cheese sharp, freshly shredded
  • 1 tbsp olive oil or butter
Seasonings
  • 0.25 cup beef broth optional, for steaming
  • 1 tbsp soy sauce or coconut aminos
  • 1 tsp salt to taste
  • 0.5 tsp black pepper freshly ground
  • 0.5 tsp red pepper flakes optional

Method
 

  1. Wash and cut broccoli into bite-sized florets; dice the onion and mince the garlic.
  2. Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned (6-7 mins).
  3. Drain excess fat if desired, leaving about 1 tablespoon in the pan.
  4. Add diced onion to the skillet and sauté for 2-3 minutes until translucent. Add garlic and cook for 30 seconds more.
  5. Add broccoli florets, beef broth, and soy sauce. Cover skillet with a lid and steam for 3-4 minutes until broccoli is tender-crisp.
  6. Remove lid and stir to combine. Season with salt, pepper, and red pepper flakes.
  7. Reduce heat to low. Sprinkle shredded cheddar cheese over the top. Cover and let sit for 1-2 minutes until cheese melts.
  8. Serve immediately, garnished with parsley if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days.
