- Preheat oven to 425°F (220°C). Toss potatoes with olive oil, salt, and pepper.
- Roast potatoes for 25–30 minutes, flipping halfway, until crispy and golden.
- Toss sliced beef with cornstarch until evenly coated.
- Sear beef in a hot skillet until browned, then remove from pan.
- Add garlic and honey garlic sauce ingredients to skillet and simmer briefly.
- Return beef to skillet and toss to coat in sauce.
- Assemble bowls with potatoes and beef, garnish, and serve.
