Ingredients
  

Sandwich Components
  • 4 slices sourdough bread thick cut
  • 1.5 cups sharp cheddar cheese freshly grated
  • 1 apple Honeycrisp or Granny Smith, cored and thinly sliced
  • 4 slices bacon cooked until crispy
  • 2 tbsp honey or hot honey
  • 2 tbsp butter softened (or mayonnaise)
  • 1 pinch fresh thyme leaves optional

  • Spatula

Method
 

  1. Cook the bacon in a skillet until crispy. Drain on paper towels and set aside.
  2. Spread softened butter evenly on one side of each slice of sourdough bread.
  3. Place two slices of bread, butter-side down, on a cutting board. Layer with half of the grated cheddar cheese.
  4. Top the cheese with an even layer of sliced apples, followed by the crispy bacon.
  5. Drizzle the honey evenly over the bacon and apples. Sprinkle with fresh thyme, if using.
  6. Add the remaining cheddar cheese on top, then cover with the remaining bread slices, butter-side facing out.
  7. Heat a skillet over medium-low heat. Cook the sandwiches for 4-6 minutes until the bottom is golden brown.
  8. Carefully flip the sandwiches and cook for another 4-5 minutes until the bread is toasted and the cheese is fully melted. Slice and serve immediately.

Notes

Cook on medium-low heat to ensure the cheese melts thoroughly before the bread burns. You can use a pan lid to trap steam and help the cheese melt faster.
