- Cook the bacon in a skillet until crispy. Drain on paper towels and set aside.
- Spread softened butter evenly on one side of each slice of sourdough bread.
- Place two slices of bread, butter-side down, on a cutting board. Layer with half of the grated cheddar cheese.
- Top the cheese with an even layer of sliced apples, followed by the crispy bacon.
- Drizzle the honey evenly over the bacon and apples. Sprinkle with fresh thyme, if using.
- Add the remaining cheddar cheese on top, then cover with the remaining bread slices, butter-side facing out.
- Heat a skillet over medium-low heat. Cook the sandwiches for 4-6 minutes until the bottom is golden brown.
- Carefully flip the sandwiches and cook for another 4-5 minutes until the bread is toasted and the cheese is fully melted. Slice and serve immediately.
Notes
Cook on medium-low heat to ensure the cheese melts thoroughly before the bread burns. You can use a pan lid to trap steam and help the cheese melt faster.
