High Protein Peperoni Pizza Rolls

Ingredients
  

High Protein Dough
  • 1.5 cups self-rising flour
  • 1.5 cups non-fat Greek yogurt strained
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
Filling
  • 1 cup marinara sauce no sugar added
  • 8 oz turkey pepperoni
  • 2 cups fat-free mozzarella cheese shredded
  • 2 tbsp Parmesan cheese grated
  • 1 large egg white for egg wash

Method
 

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, mix self-rising flour, garlic powder, and Italian seasoning. Add Greek yogurt and mix until a dough forms.
  3. Turn dough onto a floured surface and knead for 2-3 minutes. Divide into 4 equal large balls.
  4. Roll each ball into a large rectangle, about 1/4 inch thick.
  5. Spread marinara sauce lightly on each rectangle. Layer generously with turkey pepperoni and mozzarella cheese.
  6. Roll the dough up tightly to enclose the filling. Pinch ends to seal.
  7. Place seam-side down on the baking sheet. Brush tops with egg white and sprinkle with Parmesan.
  8. Bake for 18–22 minutes until golden brown. Cool for 10 minutes before serving.

Notes

Serve with extra marinara for dipping.
