- Preheat oven to 400°F (200°C). Lightly grease a 9x13 inch baking dish.
- In a large bowl, toss the cubed chicken breast with 1 tablespoon olive oil, garlic powder, onion powder, salt, and pepper until evenly coated.
- Spread the seasoned chicken in a single layer in the prepared baking dish.
- Pour the marinara sauce evenly over the chicken. Top with shredded mozzarella and parmesan cheese.
- In a small bowl, mix the panko breadcrumbs with Italian seasoning and the remaining 1 tablespoon of olive oil. Sprinkle over the cheese layer.
- Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F and the cheese is bubbly.
- Optional: Broil for 2-3 minutes to brown the topping. Garnish with fresh parsley before serving.
