Ingredients

Garlic Butter Spread
  • 4 tbsp unsalted butter softened to room temperature
  • 3 cloves fresh garlic minced
  • 1 tbsp fresh parsley finely chopped
  • 2 tbsp parmesan cheese grated
  • 0.25 tsp sea salt
Sandwich Assembly
  • 4 slices sturdy bread Texas Toast or Sourdough
  • 1 cup mozzarella cheese low-moisture, shredded
  • 0.5 cup sharp cheddar cheese shredded
  • 2 slices provolone cheese optional

Equipment

  • Heavy-bottomed skillet or Cast Iron
  • Spatula
  • Mixing bowl
  • Cutting Board

Method

  1. In a small bowl, thoroughly mix the softened butter, minced garlic, parsley, parmesan, and salt to create a compound butter.
  2. Lay the 4 slices of bread flat and generously spread the garlic butter mixture evenly over one side of each slice.
  3. Heat a heavy skillet over medium-low heat. Place two slices of bread in the pan, butter-side down.
  4. Immediately layer the mozzarella, cheddar, and provolone evenly over the unbuttered sides of the bread in the pan.
  5. Top with the remaining two slices of bread, ensuring the garlic-buttered side is facing outward (up).
  6. Cook slowly for 4-6 minutes until the bottom crust is golden-brown and crispy.
  7. Carefully flip each sandwich and cook for an additional 4-5 minutes on the other side until the cheese is completely melted.
  8. Remove from the pan, let rest for 2 minutes on a cutting board, then slice diagonally and serve immediately.

Notes

Always shred cheese from a block for the best melt. Pre-shredded cheese contains anti-caking agents that ruin the texture.
