Ingredients
  

Chicken & Sauce
  • 1.5 lbs boneless skinless chicken breasts
  • 8 oz cream cheese cubed, room temperature
  • 10.5 oz condensed cream of chicken soup 1 can
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 4 garlic cloves minced
  • 1 tsp Italian seasoning
  • 0.5 tsp onion powder
  • 0.5 tsp black pepper
  • 0.5 tsp salt
  • 1 cup Parmesan cheese freshly grated
Pasta & Garnish
  • 20 oz cheese tortellini refrigerated or frozen
  • 2 tbsp fresh parsley chopped, for garnish
  • 1 tsp cracked black pepper for serving

Equipment

  • Slow cooker (6-quart)
  • Two forks for shredding
  • Grater for Parmesan
  • Ladle

Method
 

  1. Place chicken breasts in a single layer in the slow cooker. Season with salt, pepper, Italian seasoning, and onion powder.
  2. Add cubed cream cheese, condensed cream of chicken soup, chicken broth, heavy cream, and minced garlic to the slow cooker.
  3. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until chicken is fully cooked and tender.
  4. Remove chicken breasts and shred with two forks into bite-sized pieces. Return shredded chicken to the slow cooker.
  5. Stir the sauce vigorously to combine all ingredients into a smooth Alfredo sauce. Add grated Parmesan and stir until melted.
  6. Add cheese tortellini to the slow cooker and stir to coat in the sauce. Cover and cook on HIGH for 20–30 minutes until tortellini are tender.
  7. Taste and adjust seasoning as needed. Ladle into bowls, garnish with fresh parsley and cracked black pepper, and serve immediately.

Notes

For best results, use freshly grated Parmesan rather than pre-shredded. Check tortellini at the 20-minute mark to avoid overcooking. Add a splash of warm chicken broth if the sauce becomes too thick.
