Ingredients
  

Sushi Rice Layer
  • 3 cups cooked sushi rice
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 0.5 tsp salt
Salmon Mixture
  • 1 lb fresh salmon cubed
  • 6 oz cream cheese softened
  • 0.5 cup mayonnaise
  • 2 tbsp sriracha adjust to taste
  • 1 tbsp soy sauce
Toppings & Serving
  • 2 tbsp furikake seasoning
  • 2 tbsp green onions sliced
  • 1 tbsp sesame seeds
  • 1-2 avocados sliced, for serving
  • 1 pack nori sheets for serving

Equipment

Method
 

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Season warm sushi rice with rice vinegar, sugar, and salt. Mix gently.
  3. Spread seasoned rice evenly in the prepared baking dish.
  4. Sprinkle furikake evenly over the rice layer.
  5. In a bowl, mix salmon, cream cheese, mayonnaise, sriracha, and soy sauce until combined.
  6. Spread the salmon mixture evenly over the rice.
  7. Bake uncovered for 18–22 minutes until salmon is cooked through.
  8. Garnish with green onions and sesame seeds. Rest 5 minutes before serving.

Notes

Serve with nori sheets or over rice bowls. Adjust spice to taste.
