Ingredients
  

Chicken Base
  • 1.5 lbs chicken breast boneless skinless, cubed
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp olive oil or spray
Sauce & Toppings
  • 1.5 cups low-fat cottage cheese
  • 0.75 cup marinara sauce no sugar added
  • 1 cup mozzarella cheese shredded
  • 0.25 cup parmesan cheese grated
  • 2 tbsp fresh basil chopped, for garnish

Equipment

  • Blender or Food Processor
  • Casserole Dish (9x9)

Method
 

  1. Preheat oven to 400°F (200°C) or preheat your air fryer. Line a baking sheet if using the oven.
  2. Cut chicken breasts into 1-inch cubes and place in a mixing bowl.
  3. Season chicken with olive oil, garlic powder, onion powder, Italian seasoning, salt, and pepper. Toss until evenly coated.
  4. Cook chicken: Air fry at 380°F for 10-12 minutes OR bake in the oven for 15-20 minutes until cooked through.
  5. While chicken cooks, add cottage cheese and marinara sauce to a blender. Blend on high until completely smooth and creamy.
  6. Place cooked chicken into a 9x9 inch casserole dish. Pour the blended sauce over the chicken.
  7. Top evenly with shredded mozzarella and parmesan cheese. Bake at 400°F for 10-15 minutes until cheese is melted and bubbly.
  8. Garnish with fresh basil and serve warm.

Notes

For extra crispiness, you can dust the chicken with 1 tbsp of cornstarch before air frying.
