Ingredients
  

Chicken Base
  • 6 oz chicken breast cubed
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp dried oregano
  • 1 pinch salt and black pepper to taste
  • 1 tsp olive oil or spray
Bowl Assembly
  • 0.5 cup low-fat cottage cheese
  • 0.5 cup marinara sauce low sugar
  • 0.25 cup mozzarella cheese shredded
  • 1 tbsp parmesan cheese grated
  • 1 tsp fresh parsley chopped, for garnish

Equipment

  • Air Fryer or Skillet
  • Cutting Board
  • Knife
  • Mixing bowl

Method
 

  1. Cut chicken breast into bite-sized cubes and place in a mixing bowl.
  2. Season chicken with garlic powder, onion powder, oregano, salt, pepper, and olive oil. Toss to coat evenly.
  3. Air fry chicken at 375°F (190°C) for 10-12 minutes until golden and cooked through (or sauté in a skillet).
  4. While chicken cooks, add cottage cheese to the bottom of your serving bowl.
  5. Warm the marinara sauce in a microwave-safe dish or small saucepan.
  6. Top the cottage cheese with the cooked chicken bites.
  7. Pour warm marinara over the chicken and top immediately with mozzarella and parmesan cheese.
  8. Microwave for 30-60 seconds or broil for 2 minutes to melt the cheese completely. Garnish with parsley.

Notes

Blend the cottage cheese before serving if you prefer a smoother, ricotta-like texture.
