Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 0.25 cup powdered sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 2.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp cream of tartar
  • 0.5 tsp salt
Filling
  • 1 cup dark brown sugar packed
  • 1 tbsp cinnamon ground
  • 1 tbsp all-purpose flour
  • 2 tbsp unsalted butter melted
Glaze
  • 1 cup powdered sugar
  • 1 tbsp brown sugar
  • 0.5 tsp vanilla extract
  • 0.25 tsp cinnamon
  • 2-3 tbsp milk or cream

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. For filling: Mix brown sugar, cinnamon, flour, and melted butter in a small bowl until it forms a paste. Set aside.
  3. Cream softened butter, granulated sugar, and powdered sugar until light and fluffy (2-3 mins). Mix in egg and vanilla.
  4. Whisk flour, baking soda, cream of tartar, and salt together. Gradually add to wet ingredients until just combined.
  5. Scoop 3 tbsp dough balls. Flatten into discs, place 1-2 tsp filling in center, and fold edges to seal completely.
  6. Place on baking sheet 2 inches apart, flatten slightly. Bake 11-13 minutes until edges are golden.
  7. Cool on baking sheet for 10 minutes, then transfer to wire rack to cool completely.
  8. Whisk glaze ingredients together until smooth. Spread over cooled cookies and allow to set.

Notes

Ensure cookies are fully cooled before glazing to prevent melting.
