Ingredients
  

Special Sauce
  • 0.5 cup mayonnaise
  • 2 tbsp sweet pickle relish
  • 1 tbsp yellow mustard
  • 1 tsp white vinegar
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.25 tsp smoked paprika
Meat & Wraps
  • 1 lb ground beef 80/20 lean
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp onion powder for meat
  • 4 large flour tortillas burrito size
  • 1 cup cheddar cheese shredded
  • 2 cups iceberg lettuce shredded
  • 0.5 cup white onion finely diced
  • 0.5 cup dill pickles sliced
  • 1 tbsp olive oil for toasting

Method
 

  1. In a small bowl, whisk together mayonnaise, sweet pickle relish, yellow mustard, white vinegar, garlic powder, onion powder, and smoked paprika. Refrigerate until needed.
  2. In a large skillet over medium-high heat, cook the ground beef until browned, breaking it up into crumbles. Drain excess grease.
  3. Season the cooked beef with salt, black pepper, and onion powder. Stir well and remove from heat.
  4. Warm the tortillas slightly in the microwave for 15 seconds to make them pliable.
  5. Spread a spoonful of sauce in the center of each tortilla. Top with a layer of seasoned beef, cheese, lettuce, onions, and pickles. Add an extra drizzle of sauce.
  6. Fold the sides of the tortilla inward, then roll tightly from the bottom up to form a sealed wrap.
  7. Heat olive oil in the wiped-clean skillet over medium heat. Toast wraps seam-side down for 2-3 minutes until golden, then flip and toast the other side for 2 minutes.
  8. Slice in half diagonally and serve warm with extra sauce.

Notes

Store components separately in the fridge. Do not store fully assembled wraps, as the lettuce will wilt and the tortilla will become soggy.
