Equipment

  • Large skillet
  • Spatula
  • Cutting Board
  • Knife
  • measuring spoons and cups
  • Grater (for cheese)
  • Plate and foil (optional)

Method

  1. Prep ingredients: finely dice the onion, mince the garlic, measure spices, and shred both cheeses so they’re ready to go. Preheat a medium skillet over medium-high heat.
  2. Heat oil in skillet: add 1 tablespoon neutral oil to the preheated skillet. Once shimmering, add the diced onion and cook until softened and translucent, about 4–5 minutes, stirring occasionally.
  3. Add garlic and spices: stir in the minced garlic, ground cumin, chili powder, smoked paprika, and dried oregano. Cook for 30–45 seconds until fragrant, taking care not to burn the garlic.
  4. Brown the beef: add the ground beef to the skillet, breaking it up with a spatula. Cook until the beef is deeply browned and crumbly, about 7–9 minutes. Season with ground black pepper and fine salt while cooking. Drain excess fat if necessary, leaving a tablespoon to carry flavor.
  5. Add tomato paste and tomatoes: push the beef to one side, add the tomato paste and let it cook briefly to deepen the flavor, then mix into the meat. Pour in the canned diced or crushed tomatoes and water or beef stock. Stir to combine and simmer for 2–3 minutes so the mixture is saucy but not soupy. Taste and adjust seasoning with more salt and pepper if needed.
  6. Warm tortillas: while the filling simmers, warm each flour tortilla so it’s pliable. Heat a second skillet over medium heat and warm each tortilla 20–30 seconds per side, or wrap a stack in foil and place in a warm oven at low heat for 10 minutes.
  7. Assemble burritos: lay a warmed tortilla flat. Spoon about 1/4 of the beef mixture down the center of the tortilla, leaving 2 inches of space at each end. Sprinkle shredded sharp cheddar and shredded Monterey Jack (or mozzarella) over the meat. Add a few diced pickled jalapeños or fresh jalapeño pieces if using. Fold the sides in, then roll tightly from the bottom to form a burrito.
  8. Toast the burritos: melt unsalted butter or brush each side of the burrito with a little neutral oil in a dry skillet set over medium heat. Place seam-side down and toast 2–3 minutes until golden and sealed, then flip and toast the other side for another 2–3 minutes until light charring appears. Press gently with a spatula for even contact.
  9. Halve and garnish: transfer burritos to a cutting board and let them rest 1 minute before slicing in half at a slight angle so the melted cheese stretches and the cross-section is visible. Garnish with chopped fresh cilantro and additional diced jalapeño if desired. Serve with sour cream, salsa or hot sauce, and lime wedges on the side.
  10. Storage note: if you have leftovers, cool burritos to room temperature, wrap individually in foil or plastic wrap, and refrigerate for up to 3 days or freeze for up to 2 months. Reheat in a 350°F (175°C) oven wrapped in foil for 15–20 minutes from refrigerated or longer from frozen, or re-toast in a skillet until hot throughout.
