Method
- Whisk together mayonnaise, sweet chili sauce, Sriracha, and honey in a small bowl. Set aside.
- Toss shrimp or chicken with cornstarch, salt, and pepper until coated.
- Heat 1 tbsp oil in a wok over medium-high heat. Scramble eggs until just set, remove and set aside.
- Add 1 tbsp oil to wok. Sear protein for 2-3 minutes until cooked through. Remove and set aside.
- Add remaining oil, onion, and garlic. Sauté until fragrant (2 mins). Add peas and carrots.
- Add rice to the wok. Stir-fry for 3-4 minutes, breaking up clumps.
- Stir in soy sauce and sesame oil. Return eggs and protein to the pan.
- Remove from heat. Drizzle with 3/4 of the Bang Bang sauce and toss to combine.
- Serve immediately topped with remaining sauce and green onions.
Notes
Use day-old rice for best texture.
