  • 1/3 cup maple syrup For glazing sausages and serving
  • 1 teaspoon neutral oil (vegetable or canola) For browning sausages
  • 6 pieces bacon strips Thick-cut recommended
  • 4 slices thick-sliced bread (brioche or challah) Day-old bread gives best texture

  • 1/2 teaspoon ground cinnamon For French toast batter
  • 1 tablespoon granulated sugar For French toast batter
  • to taste powdered sugar (optional, for serving) For light dusting over French toast

Equipment

  • large nonstick skillet
  • large cast-iron or stainless skillet
  • Mixing bowls
  • Whisk
  • Tongs
  • Spatula
  • Wire cooling rack
  • Sheet pan
  • measuring cups and spoons

Method

  1. Remove eggs and milk from the refrigerator 10–15 minutes before you begin so they are not ice-cold; pat bacon and sausages dry with paper towels to remove excess moisture. Slice bread if needed and set out the remaining ingredients. This initial mise en place saves time and improves cooking results.
  2. In a shallow dish whisk together 3 eggs, 3/4 cup whole milk, 1 teaspoon vanilla extract, 1/2 teaspoon ground cinnamon, and 1 tablespoon granulated sugar until smooth; this is your French toast custard.
  3. Briefly press each slice of bread into the custard so it soaks but remains intact; set the soaked slices on a wire rack to rest for 5 minutes so the custard redistributes into the bread.
  4. Heat a large skillet over medium heat and add bacon strips in a single layer; cook until edges brown and fat renders, 3–5 minutes per side depending on thickness. Transfer bacon to a paper towel-lined tray and keep warm in a low oven if desired.
  5. In a separate skillet, add 1 teaspoon neutral oil and set over medium-high heat. Add the breakfast sausage links and let them brown, rolling frequently so all sides caramelize. Cook until they are nearly done inside, about 8–10 minutes total.
  6. For a glossy finish on the sausages, lower the heat to medium, add 1 tablespoon brown sugar and 2 tablespoons maple syrup to the pan, and spoon the mixture over the links for 1–2 minutes until a syrupy glaze forms; remove sausages to a warm plate.
  7. Reduce heat to medium and melt 1 tablespoon of the unsalted butter in a skillet. Add soaked bread slices and cook 2–3 minutes per side until golden brown and set. Keep finished French toast warm on a wire rack in a 200°F (95°C) oven while you cook the eggs.
  8. In a clean bowl whisk together 6 eggs with 1/2 cup whole milk, a pinch of salt, and a few grinds of black pepper until combined; this will make soft, creamy scrambled eggs for two people.
  9. Melt 1 tablespoon unsalted butter in a nonstick pan over low-medium heat. Pour in the egg mixture and allow the edges to set for 10–15 seconds. Using a flexible spatula, push cooked curds from the edge to the center and fold gently every 10–15 seconds until large, soft curds form. Remove from heat when eggs are still slightly wet to account for carryover cooking.
  10. Taste the eggs and adjust salt and pepper if needed. Sprinkle finely chopped parsley or chives over the eggs for color and a fresh note.
  11. If bacon or sausages have cooled, return them briefly to the pan over low heat to warm and refresh texture. Spoon any remaining maple glaze over sausages to restore their shine.
  12. Plate the breakfast by arranging the scrambled eggs on one side of a warmed white plate, placing three sausage links in front of the eggs, laying 2–3 strips of bacon beside the sausages, and stacking two slices of French toast slightly overlapping. Dust the French toast with powdered sugar if using and serve with additional maple syrup.
  13. Clean up: allow pans to cool slightly, blot excess fat with paper towels, and wash with warm soapy water. Refrigerate leftovers promptly in sealed containers: eggs up to 2 days, sausages and bacon up to 3 days, French toast up to 2 days. Reheat gently as described in storage and reheating notes.

Notes

This recipe is written for two people; scale ingredient quantities proportionally for more servings.
Cooking times vary with pan size and ingredient thickness; use a thermometer for sausages if uncertain (internal temp 160°F/71°C for pork).
