  • Whisk
  • Large nonstick skillet or griddle
  • Rimmed baking sheet (for bacon)
  • Spatula
  • Wire rack (for holding)
  • measuring cups and spoons
  • Knife and Cutting Board

Method

  1. Whisk together the all-purpose flour, baking powder, baking soda, sugar and 1 teaspoon salt in a large bowl.
  2. In a separate bowl combine the buttermilk, whole milk, 2 large eggs, 2 tablespoons melted unsalted butter and vanilla extract, then stir into the dry ingredients until mostly combined and let rest 10–15 minutes.
  3. Scrub and dice russet potatoes into 1/2-inch cubes, place in cold water to remove starch, then drain and pat dry before frying.
  4. Heat a large skillet over medium-high heat with 1 tablespoon vegetable oil and cook the diced potatoes in a single layer until golden, stirring after 4–5 minutes and continuing until tender and crisp, about 8–10 minutes total.
  5. Add chopped yellow onion and diced green bell pepper to the potatoes; season with smoked paprika, garlic powder, 1 teaspoon salt and 1/2 teaspoon black pepper, then cook until vegetables are softened and potatoes are crisped.
  6. Bake bacon on a rimmed sheet at 400°F (200°C) for 12–18 minutes until crisp or pan-fry over medium heat until edges are browned; transfer to paper towels to drain.
  7. Form ground beef into four patties, season with salt and black pepper, cook on a hot griddle 3–4 minutes per side and top with a slice of cheese near the end of cooking; tent and keep warm.
  8. Butter one side of each sandwich bread slice and toast on the griddle until golden; optionally spread mayonnaise and mustard on the untoasted side before assembling.
  9. Cook pancakes on a medium griddle using 1/4 cup batter per pancake, flip when bubbles form, and stack with a pat of butter and warm maple syrup for serving.
  10. Whisk the remaining 2 eggs with 2 tablespoons milk or cream and a pinch of salt and pepper; cook slowly in 1 tablespoon butter over medium-low heat, stirring gently until large curds form and eggs are still glossy, then remove from heat.
  11. Arrange pancakes, bacon, a cheeseburger-style breakfast sandwich, scrambled eggs and a portion of home fries on each plate and serve immediately with orange juice or a beverage of your choice.
