Ingredients
  

Waffle Batter
  • 1 cup oat flour
  • 0.5 cup vanilla whey or strawberry protein powder
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 1 tbsp coconut sugar or brown sugar
  • 2 eggs large
  • 1 cup Greek yogurt plain or vanilla
  • 0.5 cup unsweetened almond milk or any milk
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries chopped
  • 1 tbsp melted coconut oil or melted butter
  • 1 tbsp chia seeds optional

Method
 

  1. Preheat waffle iron according to manufacturer instructions and lightly grease.
  2. In a large bowl, whisk together oat flour, protein powder, baking powder, baking soda, salt, and coconut sugar.
  3. In a separate bowl, whisk eggs, Greek yogurt, almond milk, vanilla extract, and melted coconut oil.
  4. Combine wet and dry ingredients until a thick batter forms. Let rest for 2–3 minutes.
  5. Fold in chopped strawberries gently.
  6. Pour batter into the waffle iron and cook until golden brown and crisp, about 3–5 minutes per waffle.
  7. Transfer waffles to a wire rack to keep crisp while cooking remaining waffles.
  8. Serve warm with extra strawberries, Greek yogurt, or a drizzle of maple syrup.

Notes

For extra crispiness, reheat in a toaster or air fryer. Freeze leftovers for up to 2 months.
