Ingredients
  

Pudding Base
  • 1 cup plain non-fat Greek yogurt
  • 1 scoop chocolate protein powder approx 30g
  • 1 tbsp unsweetened cocoa powder
  • 1 tbsp zero-calorie sweetener
  • 0.5 tsp vanilla extract
Layers and Toppings
  • 2 chocolate sandwich cookies crushed
  • 2 tbsp light whipped topping optional
  • 1 tsp sugar-free chocolate syrup optional

Equipment

Method
 

  1. In a medium bowl, thoroughly whisk together the Greek yogurt, chocolate protein powder, cocoa powder, sweetener, and vanilla extract until smooth and thick.
  2. Place the chocolate sandwich cookies in a sealed bag and crush them into a mix of fine crumbs and small chunks.
  3. Spoon half of the crushed cookies into the bottom of a serving glass to form the first layer.
  4. Carefully spoon the prepared chocolate protein pudding over the cookie crumb layer.
  5. Sprinkle the remaining crushed cookies evenly over the top of the pudding.
  6. Cover and chill in the refrigerator for at least 30 minutes to let the pudding set.
  7. Before serving, garnish with light whipped topping and a drizzle of sugar-free chocolate syrup.

Notes

For the best texture, use a whey/casein blend protein powder. If the pudding is too thick, add a teaspoon of almond milk until desired consistency is reached.
